Fermentation: Where Flavor Begins

Great chocolate starts with great fermentation. This natural process begins soon after the pods are opened, as the beans are heaped and covered. Over several days, microbial activity heats the beans and breaks down the sugary pulp, triggering chemical reactions inside. These reactions unlock the complex flavor precursors that define fine-flavor cacao.

Drying: Locking in the Goodness

Once fermentation is complete, the beans must be dried to reduce moisture and preserve quality. We carefully spread the beans in thin layers, allowing them to dry slowly under the sun or in controlled conditions. This halts fermentation, stabilizes the flavor, and prevents mold. Temperature, timing, and hygiene are key — whether done on-farm or at our facility, we ensure every batch meets our high standards.
